All tea is derived from the Camellia Sinensis plant, a native of Southeast Asia. The difference between black and green tea lies in the processing method. Green tea leaves are dried immediately after picking, whereas black tea is partially dried and then undergo a full oxidation (usually called fermentation). These processes, in combination with the local conditions in the various tea-growing regions of the world, determine a tea’s characteristics.
